CHHUANI (Jaggery&Dry fruit mix)

Chhuani is a traditional punjabi dry fruit and jaggery mix which is considered as an amazing source of energy, strength and nourishment post delivery. In the punjabi culture it is believed that a small bowl of this mix with a glass of warm milk twice a day helps the mother with breastfeeding the new born baby.

Ingredients:
Almonds | 250 grams |
Melon Seeds | 250 grams |
Foxnuts | 100 grams |
Ajwain | 2 tsp |
Jaggery | 35o grams |
Ghee | 1/2 cup |
Method Of Preparing:
Firstly, in a medium sized wok add some ghee and roast almond till they turn crisp.
After roasting the almond, keep them aside and in the same wok add some more ghee and roast the fox nuts.
Furthermore, coarsely crush almonds and the fox nuts.
Now add more ghee and splutter the ajwain and add the melon seeds. Keep stirring till the seeds start sputtering.
Add the crushed almond and fox nut mixture to the wok and turn of the flame.
After turning of the flame, soften the jaggery by using a rollin pin and add it to the wok.
Mix everything properly and the Panjiri mix is ready to be served!
